I am one who absolutely loves to feed her family. I enjoy spending time in the kitchen planning healthy meals and preparing food I know they will love. It doesn’t always need to be a gourmet meal, or one that requires hours in the kitchen either. Most weeknights it just needs to be something my family will enjoy. I know I’ve hit the mark when they clean their plates and ask for seconds.
This week one of the worst things that could happen to any mom-who-loves-to-cook happened. My two-year-old refrigerator decided to stop working. I got the clue when I noticed a puddle of water on the hardwood floor (not cool). After I salvaged the most important foods and got them put away in the small "beverage" fridge and packed what I could into the chest freezer, I made the call to get the thing fixed. Mom panic arose when I heard it would take more than a week to get it repaired.
How do I feed my family for over a week without a way to keep the food fresh?
I’m a resourceful mom, so I think through my options. We could eat out every evening, we could dine on frozen pizza every night, or I can come up with simple yet healthy meals for my family. I chose the latter.
Chicken is a family favorite and very versatile. Knowing I don’t have a refrigerator to keep it fresh, I turned to the frozen food section for inspiration. With a little creativity and the help of Perdue Simply Smart Organics I came up with three delicious and easy recipes to serve at dinnertime. I chose Simply Smart Organics because it is a fully cooked chicken product made with simple, organic ingredients. The fact that I can actually read (and pronounce) the ingredients on the label, that it has 25% fewer calories and 50% less fat than other brands makes it the perfect choice to serve to my family. Perdue Simply Smart Organics is the perfect solution for not only my current kitchen crisis, but for any time I am in need of a quick meal.
